Instructions
Step 1: Preheat the oven to 120°C / 250°F and set a wire rack on a baking tray.
Step 2: Put the flour, cornflour and baking soda in a bowl and mix to combine.
Step 3: Add the egg and milk and mix until incorporated. The batter will be lumpy and thick.
Step 4: Add the corn, Parmesan, green onions and coriander. Mix until all the corn is evenly coated in batter.
Step 5: Add enough oil to a skillet to just cover the base. Heat over medium-high heat.
Step 6: Spray the underside of a spatula with oil so the batter won’t stick when you flatten it.
Step 7: Put 1/4 cup of batter into the skillet and flatten it to 1 cm thick. An ice cream scoop with a lever is handy. Repeat with 2 or 3 more portions, without crowding the skillet.

Step 8: Cook for 3 minutes, until deep golden and crisp. Flip and cook the other side for 2–3 minutes.

Step 9: Transfer the fritters to the rack and keep them warm in the oven. Repeat with the remaining batter, using more oil as needed.
Step 10: Serve with a sauce of your choice for dunking.
Notes
For canned corn, drain it and dry the kernels thoroughly. Thaw frozen corn first, then dry it well.

About this recipe
Fresh corn makes especially crisp fritters, but canned or frozen corn works too. The batter is kept light so the corn shines through, with Parmesan adding savoury flavor and crisp edges.

Serve these fritters for breakfast, lunch or dinner, or offer them as a starter. Avocado sauce, sour cream or ketchup are all listed for dipping.
