Instructions

Dan Dan sauce

  1. Step 1: Mix all the sauce ingredients except the oil and chicken stock. Gently stir in the oil and stock; the oil should sit on the surface. Set aside.

Pork topping

  1. Step 2: Mix together the Hoisin sauce, soy sauce, Chinese cooking wine and five-spice powder to make the sauce.

Four panels show pork cooking in a wok, sauce being added and the mustard greens warmed.
  2. Step 3: Heat the oil in a skillet or wok over high heat. Add the pork and cook, breaking it up as it cooks, until it changes from pink to white. Add the sauce and cook for 1 minute, then transfer the pork to a bowl.

Preserved mustard greens

  1. Step 4: Return the skillet to the stove and reduce the heat to medium. Add the oil to the middle of the skillet.

  2. Step 5: Add the Sui Mi Ya Cai and stir for 30 seconds, just to warm through. Set aside.

Noodles and choy sum

  1. Step 6: Bring a large pot of water to a boil. Cook the noodles according to the packet directions.

  2. Step 7: Add the choy sum for the last 1 minute of cooking.

  2. Step 10: Sprinkle with the peanuts and green onions, then serve.

  3. Step 11: To eat, mix everything together to coat the noodles well with the sauce.

Notes

For less heat, use less chilli paste, Sichuan pepper and chilli oil. The recipe notes that chilli oil contributes to the dish’s look, mouthfeel and flavour.

For dried noodles, use 300 g (10 oz) of white wheat noodles and prepare them according to the packet directions.
