Instructions
Step 1: Heat the oil in a large skillet over medium-high heat.
Step 2: Cook the sausages, turning them until browned all over, then remove them from the skillet. If you like, slice them diagonally into pieces.
Step 3: Add the garlic and onion to the same skillet. Cook for 2 minutes, until translucent.
Step 4: Add the curry powder and stir for 30 seconds.
Step 5: Add the flour and mix for 30 seconds.
Step 6: Gradually pour in the chicken stock, mixing constantly.
Step 7: Add the carrot, sugar, salt and pepper, then stir well.
Step 8: Add the sausages and peas. Bring to a simmer and cook for 3 minutes, or until the sauce thickens.
Step 9: Serve over mashed potato, rice, pasta or noodles. For a low-carb option, try mashed cauliflower.
Notes
For a gluten-free version, leave out the flour. Mix 2 tablespoons cornstarch with 2 tablespoons water and add it just after the chicken stock; the sauce will thicken as it simmers.
For fuller-flavoured sausages, look for ones with visible pieces of meat and fat rather than a uniform pink colour.
