  • Food processor
  • Piping bag
  • Wide star piping tip
  • Small melon baller or teaspoon

Instructions

Smoked salmon mousse

  1. Step 1: Put the smoked salmon mousse ingredients in a food processor and blitz until completely smooth, scraping down the sides as needed.

  2. Step 2: Fit a piping bag with a wide star tip nozzle, 1.5–2 cm (0.6–0.75 inches) wide, and transfer the mousse to the bag. Refrigerate for 5 hours, until firm.

Cucumber

  1. Step 3: Cut the cucumbers into 1.5 cm (0.6-inch) thick slices.

  2. Step 4: Use a small melon baller or teaspoon to scoop out a well in each slice.

Assemble

  1. Step 5: Pipe the mousse into the cucumber rounds. Top with dill and serve immediately.

Notes

Make-ahead and variations

Keep the mousse in its piping bag in the refrigerator for up to 3 days. Prepare the cucumber separately and assemble just before serving; assembled cucumber can begin to sweat after 30–45 minutes.

Smoked trout or another smoked fish can replace the salmon. If using soft, spreadable cream cheese, skip the sour cream. Dill can be replaced with chives or parsley.

If you leave the cucumber centres intact, cut the cucumber slices a little thinner. The mousse can also be spooned onto the cucumber if you do not have a piping bag.
