Equipment

- Large bowl
Instructions
Step 1: Shake the dressing ingredients together in a jar.
Step 2: Put the salad ingredients in a large bowl. Drizzle with the dressing and toss to combine.

Step 3: Serve immediately, or keep for up to 4 days. Add a squeeze of lime if needed to freshen the flavor.
Step 4: Serve as a light meal or side with beef, fish, prawns, pork or chicken. It also works well in tacos, burritos, enchiladas, nachos and fajitas, or alongside Southern-style foods such as pulled pork, barbecue ribs and fried chicken.
Notes
Use other beans, lentils or chickpeas in place of the black beans. Frozen corn can be used after thawing; coriander can be replaced with chives. Smoked paprika can stand in for chipotle powder.
