Instructions
Step 1: Preheat the oven to 200°C/390°F.
Step 2: Place the cauliflower in a large bowl. Drizzle with the oil and sprinkle with the garlic. Use your hands to mix and rub the oil over all the cauliflower.
Step 3: Sprinkle with the chipotle, salt, and pepper. Toss to coat.
Step 4: Spread the cauliflower on a tray. Bake for 25 minutes, tossing once, until the edges are caramelized and the cauliflower is just tender. Leave space between the florets so they roast rather than steam.
Step 5: Remove from the oven. Push the cauliflower together and drizzle with the lime juice.
Step 6: Sprinkle with the coriander and serve hot.
Notes
To substitute for chipotle powder, use 1/2 tsp smoked paprika, 1/4 tsp cumin or coriander powder, and 1/4 tsp cayenne pepper if you want extra heat. Chili powder can also work; use a US-style spice blend, not pure chilli powder.

About this recipe
Cauliflower florets roast with chipotle, garlic, and olive oil until tender inside and caramelized at the edges. A squeeze of lime and a sprinkle of coriander bring a bright finish.

Serve this as a side dish or enjoy it as a meal.

For neater prep, cut the cauliflower into quarters, slice out the core at an angle, then break larger pieces into florets by hand.
