Parmesan Mixture

Dipping Sauce (optional)

Equipment

  • Oven
  • Bowl
  • 22 x 33 cm / 9 x 13-inch glass baking dish
  • Spoon
  • Serving platter

Instructions

  1. Step 1: Preheat the oven to 200°C / 400°F (180°C fan-forced).

  2. Step 2: Mix the Parmesan Mixture ingredients in a bowl.

Finely grated Parmesan with a sandy texture in a bowl and scoop.
  3. Step 3: Drizzle oil into a 22 x 33 cm / 9 x 13-inch glass baking dish. Tilt the dish to spread the oil over the base.

  4. Step 4: Use a spoon to scatter the Parmesan Mixture over the base, spreading it as evenly as you can. Once sprinkled, leave it in place; do not try to spread it.

  5. Step 5: Place the potatoes cut-side down on the Parmesan Mixture, pressing them firmly into it.

  6. Step 6: Optional: drizzle the tops of the potatoes with a little oil or spray with oil, then sprinkle with salt.

  7. Step 7: Bake for 35–40 minutes, or until the potatoes are soft and the Parmesan crust is deep golden. You can check through the glass dish.

  8. Step 8: Rest for 5 minutes. Use an egg flip to cut between groups of about 4 potatoes, cutting through the Parmesan crust that joins them. Scoop up about 4 potatoes at a time and turn them upside down onto a serving platter so the cheese side is facing up.

  9. Step 9: Serve with the dipping sauce, if using, and sprinkle with extra green onions if desired. Serve as a side dish or as nibbles.

Notes

Ingredient and pan notes

  • Use finely grated Parmesan with a sandy texture. For freshly grated Parmesan, use 50 g / 1.75 oz and grate it finely; measure by weight rather than cups.

  • A metal baking pan works too, though the potatoes may come away a little more easily from glass. Avoid lining the pan with baking paper, as the crust may be less crisp.

Make ahead and leftovers

Cool leftovers, then refrigerate. To reheat, place them cheese-side up in a baking pan and bake at 200°C / 400°F for 5 minutes, or until heated through and crisp again.
