Equipment

  • Large heavy-based casserole pot

Instructions

  1. Step 1: Put the olive oil and bacon in a large heavy-based casserole pot over high heat.

  2. Step 2: When the oil is hot and the bacon has released some fat, add the chicken.

  3. Step 3: Sprinkle with salt and pepper. Cook until the chicken and bacon are browned.

  4. Step 4: Add the garlic and onion and cook for 1 minute.

  5. Step 5: Add the celery and carrot and cook for 2 minutes.

  6. Step 6: Add the red wine and let it simmer rapidly for 2 minutes, until the winey alcohol smell is gone.

  7. Step 7: Add the flour and mix until incorporated.

  8. Step 8: Slowly pour in half the beef stock while stirring, then pour in the rest.

  9. Step 9: Add the tomatoes, Worcestershire sauce, thyme, bay leaves, salt and pepper.

  10. Step 10: Stir, then add the potatoes.

  11. Step 11: Cover and simmer for 30 minutes.

  12. Step 12: Remove the lid and add the mushrooms and green beans. Simmer uncovered for a further 10 minutes.

Tip: Keep the pot uncovered so the sauce can thicken.

  13. Step 13: Serve with crusty bread, sprinkled with parsley if desired.

Notes

Ingredient options

  • Beef stock gives the sauce a deeper brown color, but chicken stock can be used instead.

  • Use a dry, full-bodied red wine; Cabernet Sauvignon and Merlot are suggested. Guinness or stout can also be used.

  • For a version without wine, brown the bacon well and remove it. Brown the mushrooms and remove them, then brown the chicken. Continue with the recipe, returning the bacon after the chicken is browned and adding the mushrooms at the end.

Boneless chicken thighs stay juicy during simmering. If using chicken breast, add it during the last 5 minutes, just to finish cooking through.
