Equipment

  • Stand mixer with paddle attachment
  • Handheld beater
  • Large bowl
  • Whisk
  • Knife
  • Serving platter

Instructions

  1. Step 1: Shred the chicken as finely as you can. For the best method, put the meat in the stand mixer bowl with the paddle attachment and mix on medium speed until very finely shredded, about 1 minute. You can also use a handheld beater or your hands.

  2. Step 2: Mix the sauce ingredients in a bowl until smooth, using a whisk if needed.

  3. Step 3: Pour the sauce over the chicken. Add the remaining filling ingredients and stir until combined.

  4. Step 4: Spread butter on the bread, then spread with filling. For a deli-style sandwich, use 100 g or 1/2 cup of filling per sandwich; for a very generous sandwich, use 130 g or 1/2 cup; for a lunchbox sandwich, use 80 g or 1/3 cup.

White bread being buttered, filled with chicken mixture and cut into sandwich portions.
  5. Step 5: Remove the crusts if desired, then cut each sandwich in half. For neater cuts, refrigerate the assembled sandwiches before slicing so the filling firms up.

  6. Step 6: If desired, serve on platters with green leaves.

  7. Step 7: Choose a filling portion for each sandwich: 100 g / 1/2 cup makes 10 deli-standard sandwiches; 130 g / 1/2 cup makes 8 very generously filled sandwiches; or 80 g / 1/3 cup makes 15 everyday lunchbox sandwiches.

Notes

The filling keeps in the refrigerator for up to 3 days. The assembled sandwiches are best made fresh, though they can be refrigerated; the bread softens over time.

For the filling, walnuts can be replaced with cashews, macadamia nuts or pecans, or left out. Full-fat yogurt can replace the sour cream, and white wine or cider vinegar can replace the lemon juice.
