Instructions

Pickled vegetables

  1. Step 1: In a large bowl, dissolve the salt and sugar in the hot water. Stir in the vinegar. Add the carrots and daikon; the vegetables should be just about covered.

  2. Step 2: Leave for 2 hours, until slightly floppy. Drain well, then use in the sandwiches.

Banh mi

  1. Step 3: Split each roll in half without cutting all the way through.

  2. Step 4: Spread butter on the inside of the top half of each roll.

  3. Step 5: Spread 1 to 2 tablespoons of pâté on the base of each roll, then spread on 1 1/2 tablespoons of mayonnaise.

Pâté being spread onto the base of a split roll.

Tip: Be generous with the pâté.

  4. Step 6: Pile on the shredded chicken and drizzle with 1/4 teaspoon of seasoning sauce per sandwich. Add more later if desired.

  5. Step 7: Fill with pickled vegetables, 2 cucumber slices, 3 green onion pieces and coriander. Sprinkle with as much chilli as you like, then press the top of the roll down.

Notes

If you can’t find daikon, use twice as much carrot. Apple cider vinegar can replace the rice wine vinegar.

If the rolls aren’t crusty, crisp them in the oven for a few minutes. For a lunch sandwich, assemble it without the seasoning sauce and add the sauce just before eating.

For an alternative to the seasoning sauce, use a 50/50 combination of soy sauce and Worcestershire sauce.
