Instructions
Step 1: Place the sugar in a medium saucepan over low heat and shake the pan to spread it. Leave it for a few minutes, until the edges start melting and turning golden. Swirl the pan to encourage the sugar to melt evenly; do not stir, as the sugar may crystallize.
Step 2: Once the sugar has completely melted, add the apples and vinegar. Mix, then cook for 8–10 minutes, stirring occasionally, until the apples are completely soft.
Step 3: Add the butter and stir until mostly melted. Blend until smooth with a stick blender. If needed, tilt the saucepan so the blender head is completely submerged to avoid splattering.

Step 4: Serve with slow-roasted crispy pork belly or another pork dish. It also works with sweet dishes.
Notes
Refrigerate for up to 5 days. You can use any variety of apple; its flavor will shape the sauce.

About this recipe
Melting the sugar into caramel before adding the apples gives this smooth apple sauce a deeper, richer flavor. Gala apples are mildly sweet; Granny Smith makes a tarter sauce, while Red Delicious or Pink Lady makes it sweeter.

Serve it with pork, or try it with pancakes, toast, scones, muffins, or cake.
