Instructions

Cajun salmon bites

  1. Step 1: Preheat the oven to 240°C/460°F (220°C fan-forced).

  2. Step 2: Lightly scrunch a sheet of foil, then gently unfold it without flattening the wrinkles. Place it on a baking tray and fold the edges to secure it. If needed, repeat with another sheet to cover the whole tray.

Hands scrunching foil to create a wrinkled surface for the baking tray.

Tip: The wrinkles lift the fish slightly and help prevent sticking and soggy undersides.

  3. Step 3: Put the Cajun spice mix ingredients in a bowl and mix. Add the salmon and toss to coat. Spread the pieces on the foil, leaving space between them so they brown.

  4. Step 4: Bake for 12 minutes without turning. Remove the salmon from the tray so it doesn’t keep cooking, then serve.

Serving ideas

  1. Step 5: For rice bowls, serve the Cajun salmon bites with rice, lettuce, tomato, radish, and avocado.

  2. Step 6: You can serve the bites with roasted corn avocado salsa made at the same time as the salmon.

  3. Step 7: Add Peri-naise or pink Gyros sauce, or mix mayonnaise with sriracha or ketchup. Finish with chopped coriander or green onion if you like.

Notes

Substitutions and storage

  • Use smoked paprika in place of regular paprika, or substitute oregano or parsley for the dried thyme.

  • You can substitute more onion powder for garlic powder, or more garlic powder for onion powder. Don’t replace the garlic powder with fresh garlic; it can burn.

  • Use white sugar instead of brown sugar if needed. Honey and maple syrup won’t caramelize the surface as well.

  • For table salt, use half the listed amount; for salt flakes, use 50% more. Use a neutral-flavored cooking oil instead of olive oil if you prefer.

  • Refrigerate leftovers for 2 to 3 days. Freezing is not recommended.
