Instructions

Full recipe

  1. Step 1: Preheat the oven to 200°C / 400°F (180°C fan-forced).

  2. Step 2: Toss the potatoes with the oil and seasoning in a bowl. Spread them on a lined tray that is just big enough to hold everything snugly rather than in a single layer. Bake for 15 minutes.

  3. Step 3: Meanwhile, in the same bowl, toss the capsicum and onion with the oil, salt and pepper. Add them to the tray and toss with the potatoes.

  4. Step 4: Squeeze dollops of sausage meat out of the casings and dot them randomly over the tray. Alternatively, cut the sausages with a knife. Scatter the bacon over the top.

  5. Step 5: Bake for 20 minutes. Toss, then bake for a further 15 minutes, or until the potatoes are soft.

  6. Step 6: Lower the oven to 180°C/350°F (160°C fan).

  7. Step 7: Push the potatoes aside to make holes for the eggs. Crack the eggs into the holes and return the tray to the oven for 7 minutes, or until the eggs are done to your liking.

Notes

Make-ahead and storage

To make ahead, bake the hash until just before adding the eggs. Cool uncovered, cover and refrigerate overnight. Reheat at 180°C/350°F (160°C fan) for about 10 minutes, then add the eggs and bake to your liking.

Refrigerate leftovers for up to 3 days or freeze for up to 3 months. Cooked eggs may become rubbery when frozen.

Ingredient options

Use any type of potato; starchy or all-purpose potatoes give a fluffier inside. Regular paprika can replace smoked paprika, and the recipe notes allow any dried herb in place of thyme. Pork sausages can be replaced with another type of sausage.
