Instructions

  1. Step 1: Preheat the oven to 220°C/430°F conventional, or 200°C fan.

  2. Step 2: Put the breadcrumbs in a bowl. Grate the onion over them, including its juices. Mix until all the breadcrumbs are soaked.

  3. Step 3: Add all the remaining ingredients except the salmon and mix well.

  4. Step 4: Add the salmon and gently fold it through, leaving visible flakes rather than breaking it into tiny pieces.

  5. Step 5: Scoop up 1/4 cup of mixture, level and packed. Shape it into a round patty about 1.5 cm/2/3 inch thick, then set it aside. Repeat with the remaining mixture.

Tip: A standard ice cream scoop can be used to portion the mixture.

  6. Step 6: Drizzle the oil over a tray. Put the tray in the oven for 2 minutes, until hot and the oil has spread over it. Tilt the tray to spread the oil if needed.

  7. Step 7: Place the patties on the hot tray without pressing them down, then spray their surfaces with oil spray.

Tip: Pressing the patties down can make them stick to the tray.

  8. Step 8: Bake for 15 minutes. Flip the patties, spray their surfaces with oil spray, and bake for 5 minutes more.

  9. Step 9: Serve with sour cream or yoghurt for dipping or dolloping, and add extra fresh dill if desired.

  10. Step 10: Serve with cauliflower puree and yoghurt slaw as side options.

Notes

Ingredient options

For a low-carb option, replace the panko with 1 cup raw cauliflower rice. For a gluten-free option, use 1 cup crushed rice crackers or almond meal instead of the breadcrumbs.

The salmon can be canned red or pink salmon, or cooked fresh salmon. Tuna, sardines, or another canned fish can also be used.

Serve with cauliflower puree and yoghurt slaw as side options, or offer sour cream or yoghurt for dipping.

About this recipe

These salmon patties bake until golden on the outside while staying tender and savoury inside, with distinct flakes of salmon and fresh dill. Use canned salmon or cooked fresh salmon, and serve them as a meal or as a shareable starter.
