A cartouche is a round piece of baking paper that sits directly on cooking food. It helps food cook evenly and keeps the top from drying out.

Use this paper cover for dishes such as stews or Pommes Anna.

What you'll need

  • baking paper, parchment paper

Step by step

  1. Cut a square of baking paper just big enough to cover the pan or pot. Fold it in half diagonally.

  2. Fold it in half again.

Hands folding a square of baking paper into smaller sections.
  3. Fold it in half one more time.

  4. Fold it in half one last time to make a small paper wedge.

Hands folding the baking paper into a narrow wedge.
  5. Hold the pointed end at the centre of the pan or pot and check the length. The long side should reach the edge.

  6. Fold the end where you plan to cut to make a clean line.

  7. Cut the folded paper to size.

  8. Unfold the paper and place it on the food you are cooking.

Tips

Use the cartouche directly on the food instead of as a pot lid. It helps retain moisture while allowing a little steam to escape.
