Choose from six ways to serve cooked lobster: with dipping sauces, as a cocktail, with herb and garlic butter, with lemon browned butter, with salsa verde, or in lobster rolls. Keep the lobster simple and do not cook it again, so it is less likely to dry out.

What you'll need

Lobster

  • whole cooked lobster or crayfish

Seafood sauces for lobster, choose one

  • Marie Rose sauce, also called Thousand Island

  • tartare sauce

  • seafood cocktail sauce, use sparingly; it has the most intense flavour

  • family favourite seafood sauce

Thaw

  1. If the lobster is frozen, thaw it overnight in a bowl or tray with sides to catch liquid. Drain well before using.

Remove the shell

  1. Insert a small knife at a 45-degree angle into the gap between the tail and head. Cut along the top and sides through to the middle; there is no need to cut underneath.

  4. Cut down both sides of the soft shell on the underside of the tail. Peel the shell back to reveal the lobster flesh.

  6. If you see a black string down the back of the tail meat, carefully pull out the vein. Stretch the meat straight to remove it in one piece if possible. Otherwise, pick it out while slicing the meat.

  7. Some meat may remain in the head and can be used. The yellow material, called tomalley, has a strong lobster flavour and is an acquired taste.

  8. Serve the tail meat whole, sliced, or diced, depending on how you plan to use it. Avoid shredding it, as it can lose juiciness.
