Pasta
Tuna sauce
Equipment

- Two spatulas
Instructions
Step 1: Bring 3 litres (3 quarts) of water to a boil with the 1 tablespoon of salt. Cook the pasta for 1 minute less than the packet directs. Just before draining, scoop out about 1 cup of pasta cooking water, then drain the pasta.
Step 2: In the same pot, heat the reserved oil from the tuna cans over medium heat. Add the garlic, anchovies and chilli flakes. Cook and stir for 1 minute.
Step 3: Add the pasta, capers and 1/3 cup of reserved pasta water. Toss with 2 spatulas for 2 minutes.
Step 4: Turn off the heat. Add the tuna, parsley, lemon zest, lemon juice, salt and pepper. Toss gently to mix, keeping some tuna in chunks.
Step 5: Serve immediately.
Notes
Substitutions and storage
If using tuna packed in brine, use 2 tablespoons of extra-virgin olive oil instead of the reserved tuna oil. The recipe can take a little more or less tuna.
Refrigerate leftovers for up to 2 days. To reheat, add a splash of water or reserved pasta water; microwave reheating is best.

About this recipe
Canned tuna, lemon and capers give this spaghetti a savory, tangy flavor, with anchovies adding extra depth. The tuna’s oil becomes the base for the sauce.

Use tuna packed in oil for the sauce, and keep some pasta water to help it cling to the spaghetti.
