Instructions

  1. Step 1: Place a dry, oil-free large saucepan or small skillet over medium-high heat.

  2. Step 2: Add the almonds and pistachios. Toast lightly, shaking the pan, until fragrant. Remove them immediately.

  3. Step 3: Melt the butter in a large saucepan over medium-high heat. Add the garlic and onion and sauté until translucent.

  4. Step 4: Add the rice and stir for 30 seconds, or until mostly translucent.

  5. Step 5: Add the spices and stir. Add the broth, sultanas and apricots, then stir.

  6. Step 6: Cover with a lid and bring to a simmer, then immediately reduce the heat to medium-low (low for strong ovens).

  7. Step 7: Cook for 15 minutes, or until the liquid is absorbed; tilt the pot to check. Remove the pot from the stove, keeping it covered, and leave it undisturbed for 10 minutes.

  8. Step 8: Remove the lid and fluff the rice with a fork. Add most of the nuts and toss.

  9. Step 9: Transfer to a serving bowl. Garnish with the remaining nuts and a little parsley, if using. Serve.

Notes

Basmati is a good choice for fluffy rice, but other white rice can be used. Long-grain, jasmine and medium-grain rice are described as the fluffiest alternatives; short-grain and sushi rice will be stickier.

Use other dried fruit or nuts if you like. Cranberries make a tarter addition; pecans, walnuts, sunflower seeds or pumpkin seeds are alternatives mentioned for the nuts.

For brown rice, add 1/2 cup water and simmer for around 40 minutes.
