Equipment

  • Oven
  • 23 x 33 cm / 13 x 9-inch baking pan
  • Baking paper
  • Foil

Instructions

  1. Step 1: Preheat the oven to 180°C / 350°F (160°C fan-forced). Line the base of a 23 x 33 cm / 13 x 9-inch pan with baking paper.

  2. Step 2: Mix the onion poppyseed butter ingredients together.

  3. Step 3: Cut the slab of rolls in half horizontally. Spread the cut sides of the base and lid with the 1/3 cup mustard. Place the bread base in the pan, top with ham, then cheese. Leave the lid off for now.

A sequence showing rolls being split and spread with mustard, then layered with ham and cheese.
  4. Step 4: Bake without the lid for 10 minutes, until the cheese is melted.

  5. Step 5: Remove the bread from the oven. Put the bread lid on top and pour or spoon the butter over it, covering the surface.

  6. Step 6: Cover with foil and bake for 20 minutes.

  7. Step 7: Remove the foil. Pierce the intersections where the corners of the rolls meet to help the pooled butter soak into the bread.

  8. Step 8: Bake uncovered for 10 minutes, or until the top is crusty.

  9. Step 9: Cut while hot and serve.

Notes

Use any ham you like; shaved or thinly sliced ham works well, and you can use up to 500 g / 1 lb if slicing it yourself. Any melting cheese can stand in for Swiss. Mild mustard can replace American mustard; avoid hot English mustard and wholegrain mustard.

Poppyseeds are optional. If you do not have a 23 x 33 cm / 9 x 13-inch pan, use a tray lined with foil and wrap the bread to hold in the butter as it bakes.

Store leftovers for 3 to 4 days, subject to the remaining shelf life of the ham. Reheat in the oven.
