Equipment

  • Oven
  • Baking tray
  • Stick blender
  • Non-stick pan

Instructions

  1. Step 1: Preheat the oven to 200°C / 390°F (180°C fan). Line a tray with baking or parchment paper.

  2. Step 2: Sprinkle the fish with salt and drizzle with lime juice. Leave it in the fridge while making the paste; 10 minutes is fine.

  3. Step 3: Place the turmeric curry paste ingredients in a container that fits a stick blender. Blend until smooth, using extra water if needed, until the mixture has a paste consistency that can be spread over the fish.

  4. Step 4: Smear the paste over the top surface of the fish, not the underside. Bake for 15 minutes, until the internal temperature reaches 55°C / 131°F.

  5. Step 5: Remove the fish from the oven and take it off the tray so it does not keep cooking. Rest for 3 minutes. Serve over rice with Sambal Tomat and extra fresh coriander.

  6. Step 6: Heat the oil in a non-stick pan over medium heat. Add the tomatoes, chilli and salt. Sauté for 2 minutes, until the tomatoes are slightly softened. Stir through the coriander and serve over the fish.

Notes

Ingredient notes

Choose firm white fish fillets about 1.5–2.5 cm thick. John Dory is pictured; suitable alternatives include barramundi, cod, halibut, snapper and tilapia.

Fresh turmeric can be replaced with powdered turmeric: start with 1/2 teaspoon and add up to 3/4 teaspoon for more colour or turmeric flavour. Turmeric stains, so wear gloves and avoid porous surfaces when preparing it.

If fresh lemongrass is hard to find, use 2 teaspoons lemongrass paste. Dried kaffir lime leaves can replace fresh leaves in the same amount.

Serve with white, jasmine, basmati or brown rice, or cauliflower rice.
