Equipment
- Oven
- 23 cm/9-inch round cake pan
- Baking paper
- Mixing bowls
- Whisk
- Handheld beater or stand mixer with paddle attachment
- Spatula
- Skewer
- Wire rack
Instructions
Step 1: Preheat the oven to 180°C/350°F (160°C fan-forced).
Step 2: Butter a 23 cm/9-inch round cake pan and line the base with baking paper. There is no need to line the sides.
Step 3: In a separate bowl, whisk together the flour, baking powder, and salt.

Step 4: Using a handheld beater or a stand mixer with the paddle attachment, beat the butter on medium for 1 minute, until creamed. Add the sugar and beat on medium for 1 minute, until fluffy and paler in color.
Step 5: Add the eggs one at a time, mixing well after each addition. Beat in the vanilla extract.

Step 6: Add the flour mixture and beat on low until no dry flour is visible, then stop beating. Do not overmix.
Step 7: Stir the diced apples through the batter with a spatula. The batter will be quite thick and will not pour.

Step 8: Spread the batter evenly in the prepared pan. Bake for 35 minutes, or until a skewer inserted in the center comes out clean. If your oven runs cool, baking may take up to 45 minutes.

Tip: Baking time can vary with the oven and apples. If the top browns too quickly, loosely cover it with foil and continue baking.
Step 9: Let the cake rest in the pan for 5 minutes before removing it. Cool for a further 10 minutes, then serve warm, or let it cool completely on a wire rack. Dust with icing sugar if desired. If serving warm, add a scoop of ice cream.

Notes
Pink Lady, Fuji, Jazz, Honey Crisp, or Braeburn apples work well. Pears can also be used if they are not overly ripe.
Regular granulated sugar can replace caster sugar. For a gluten-free version, replace the flour with an equal amount of a good-quality gluten-free flour blend; the texture will be slightly different.
For a warm, gently perfumed variation, add 1 tablespoon of dark or spiced rum. Store leftovers in an airtight container in the refrigerator for up to 5 days, or freeze for up to 2 months.
