Notes
Potato and storage notes
Use starchy or all-purpose potatoes and avoid very waxy varieties. Suitable options include Russet, Idaho or Yukon Gold in the US, and Maris Piper in the UK.
To freeze, cool the wedges before freezing. Defrost them, spray with oil and bake at 200°C/390°F for around 12 minutes, until heated through and crisp.

About this recipe
These potato wedges get their seasoning from paprika, garlic powder, onion powder, salt and pepper. A light coating of oil helps the seasoning cling, and a hot oven bakes the wedges until dark golden and crisp.

Serve them hot with sour cream and sweet chili sauce, or choose another dipping sauce such as ketchup, aioli or barbecue sauce.
