Instructions
Step 1: Preheat the oven to 220°C/430°F.
Step 2: Pour the wine and half the butter into a 9 x 13-inch / 22 x 33 cm baking pan. Place it in the oven for 10 minutes to reduce.
Tip: If using a glass pan, see the note about glass and heat.
Step 3: Toss the shrimp with the remaining butter, garlic, lemon juice, salt, and pepper.
Tip: The butter may harden; that is fine.
Step 4: Mix the crunchy topping ingredients together.
Step 5: Remove the pan from the oven. Add the shrimp, spreading them in a single layer while keeping them snug in the pan.
Step 6: Top the shrimp with the crunchy topping. Bake for 12 minutes.
Step 7: Switch the broiler/grill to high and broil for 1–2 minutes at most, until the topping browns a little more.
Step 8: Sprinkle with parsley. Serve immediately with lemon wedges and crusty bread to mop up the sauce.

Notes
Dry white wine can be replaced with chicken broth. If using small or medium shrimp, reduce the cooking time by a couple of minutes.
Panko breadcrumbs are larger than ordinary breadcrumbs and give the topping extra crunch. If you are concerned about using a glass pan, use a snug-fitting metal pan instead.
