Equipment

  • Large heavy-based pot
  • Stick blender
  • Countertop blender

Instructions

  1. Step 1: Put the olive oil and butter in a large heavy-based pot over medium-high heat. Once the butter has melted, cook the onion and garlic for 2 minutes, until the onion is softened.

Two cooking stages: onion cooking in a pot, followed by root vegetables added to the pot.
  2. Step 2: Add the root vegetables, thyme and curry powder. Cook for 3 minutes, stirring regularly, until the outsides of the vegetables start to soften.

  3. Step 3: Turn the stove to high. Add the water, salt and pepper, then stir. Once the liquid comes to a simmer, lower the heat to medium-high and simmer rapidly, uncovered, for 15 minutes, until all the vegetables are soft. Check with a knife.

  4. Step 4: Stir in the cream and simmer for 1 minute.

  5. Step 5: Remove the pot from the heat and use a stick blender to blend the soup until smooth. Adjust to taste, adding water to thin it, salt and pepper if needed, or extra cream for a richer finish.

Tip: If using a countertop blender, blend in batches, remove the lid insert and cover the opening with a folded tea towel.

  6. Step 6: Serve in bowls. Drizzle with cream and garnish with a pinch of curry powder, parsley and pepper. Serve with warm crusty bread.

Notes

Swaps and storage

Swap in more of the listed root vegetables as you like. Pumpkin can replace any of them; swede or turnip can stand in for parsnip or celeriac. If you use extra parsnip or celeriac, their stronger flavors will be more prominent. Less starchy, higher-water vegetables can make the soup thinner and less creamy.

For a cream alternative, use 1/3 cup milk and about 2 tablespoons (30 g) unsalted butter. Leftovers keep for 4 days in the fridge or 3 months in the freezer.
