Equipment

  • 8-inch square pan
  • Parchment paper
  • Medium bowl
  • Large bowl
  • Small bowl
  • Whisk
  • Sifter
  • Digital thermometer

Instructions

Prepare the pan

  1. Step 1: Preheat the oven to 350°F with a rack in the center. Line an 8-inch square pan with a parchment sling, then lightly grease the parchment.

Make the crumbs

  1. Step 2: In a medium bowl, stir together the butter, sugars, and salt. Sift in the flour and cocoa powder, then stir until a smooth, soft dough forms. Cover and set aside while you make the cake batter.

Make the cake batter

  1. Step 3: In a large bowl, vigorously whisk the sugar and egg until pale and thick, about 1 minute. Add the oil and whisk until thick, shiny, and emulsified.

  2. Step 4: Whisk in the pumpkin, vanilla, spice, baking powder, baking soda, and salt until combined. Add the flour and whisk until no dry streaks remain.

  3. Step 5: Transfer the batter to the prepared pan and spread it into an even layer.

  4. Step 6: Use your hands to break the crumb dough into pieces of various sizes, some as big as almonds and others as small as chickpeas and lentils. Scatter the pieces evenly over the cake batter.

Bake and cool

  1. Step 7: Bake for 28 to 32 minutes, until a toothpick or paring knife inserted into the center comes out clean. The internal temperature should be at least 200°F when measured with a digital thermometer.

  2. Step 8: Remove the cake from the oven and let it cool in the pan for about 20 minutes. While it cools, prepare the glaze.

Glaze and serve

  1. Step 9: In a small bowl, stir together the glaze ingredients until smooth, starting with the smaller amount of milk. Add more milk as needed until the glaze is the consistency of molasses.

  2. Step 10: Drizzle the glaze all over the cake, allowing it to cover the surface. Let the glaze set for 30 to 45 minutes before removing the cake from the pan, using the parchment sling as handles. Slice and serve at room temperature.

Store leftovers

  1. Step 11: Wrap leftover cake well and store it at room temperature for several days, or freeze it for longer storage.

Notes

Baking tips

For the deepest color and richest chocolate flavor, use Double Dark Cocoa Blend or black cocoa. Other natural or Dutch-process cocoa can be substituted in the same amount, though the contrast and chocolate flavor may be subtler.

For a ceramic square pan, preheat the oven to 325°F and bake for about 33 to 37 minutes. Check that a toothpick or paring knife inserted in the center comes out clean and that the internal temperature is at least 200°F.

Storage

Wrap leftover cake well and store it at room temperature for several days, or freeze it for longer storage.
