Instructions
Step 1: Put the broth ingredients in a saucepan over high heat and cover. Bring to a simmer, then reduce the heat to medium and simmer for 8–10 minutes to infuse the flavors.

Step 2: Meanwhile, cook the noodles according to the packet directions.
Step 3: Cut small or medium bok choy in half lengthwise, or large bok choy into quarters. Wash thoroughly.
Step 4: Cook the bok choy in the soup broth or, if the noodles need boiling, in the noodle cooking water for 1 minute.
Step 5: Remove the garlic and ginger from the soup.
Step 6: Divide the noodles between bowls. Top with the chicken and bok choy, ladle the soup over them, and garnish with the sliced green onion. Serve with chilli paste or fresh chillies if desired.
Notes
Ingredient options
Fresh or dried noodles can be used; cook them according to the packet directions and keep them out of the broth while they cook. Other vegetables and proteins can replace the bok choy and chicken.
Dry sherry can replace the Chinese cooking wine; cooking sake or mirin are also listed as alternatives. If using mirin, skip the sugar. For a non-alcoholic alternative, use 1 tablespoon soy sauce and add 1 tablespoon oyster sauce.
