  • Baking paper

Instructions

  1. Step 1: Preheat the oven to 200°C/390°F (180°C fan-forced).

  2. Step 2: Put the flour, baking powder and salt in a food processor fitted with a standard S blade. Pulse once. Add the butter and pulse 4 to 5 times, until the largest pieces are about the size of a pea.

Tip: To make the dough by hand, rub the butter into the flour with your fingertips or use a flour cutter.

  3. Step 3: Add the cheese and pulse once, just to mix it through.

  4. Step 4: Pour the milk through the feeding tube while pulsing 8 to 10 times, until the flour is just incorporated. Stop straight away. The dough will be shaggy rather than smooth and should be a little sticky but still manageable.

  5. Step 5: Scatter 1 tsp flour over a work surface. Scrape the dough out of the food processor and bring it together into a ball with your hands. Try to avoid adding extra flour, but dust with more if needed.

  6. Step 6: Put the dough on a sheet of baking paper and pat it into a round disc about 3 cm (1.2 inches) thick. Brush the top and sides with milk, sprinkle with cheese and press it in lightly. Cut into 6 wedges.

  7. Step 7: Transfer the dough, still on the baking paper, to a baking tray. Pull the wedges apart so they are about 5 cm (2 inches) apart. Bake for 20 minutes, until the surface is golden.

  8. Step 8: Cool on the tray for 5 minutes, then serve warm with butter.

Notes

For a hand-made dough, rub the butter into the flour with your fingertips or use a flour cutter. For round scones instead of wedges, shape the dough to 2.5 cm (1 inch) thick, cut 5–6 cm (2–2.4 inch) rounds and bake for 15 minutes.

Cheddar or tasty cheese works well. For a different flavor, use another good melting cheese such as sharp vintage cheddar, Swiss or Gruyere.
