Equipment

  • Bowl
  • Electric beater
  • Piping bag

Instructions

  1. Step 1: Put the cream, icing sugar and your chosen vanilla in a bowl. Beat with an electric beater on medium-high, moving it around the bowl, until the cream reaches the stiffness you want. Stop once or twice to scrape down the sides of the bowl if needed.

An electric hand mixer whipping cream in a bowl, with a second view showing firm peaks.

Tip: Make sure the cream is fridge-cold before you begin.

  2. Step 2: For soft peaks, whip for around 1 1/2 minutes; for stiff peaks, whip for around 2 minutes. If you increase the batch, it will take longer.

Tip: Soft peaks suit dolloping; stiff peaks suit piping. Avoid beating for too long, or the cream can become lumpy and eventually turn to butter.

  3. Step 3: To use, fill a piping bag fitted with your chosen nozzle and pipe the cream, spread it onto cakes, or dollop it onto fruit or pies.

Notes

Storage

For the fluffiest texture, whip the cream just before serving. It may start to deflate after about 1 hour, sooner on hot days. It can be kept in the fridge for 2 to 3 days, though it may weep.
