Instructions
Step 1: Put the leaves into a large mixing bowl. Tear or cut any large leaves into smaller, bite-size pieces.
Step 2: Peel the oranges. Using a knife, remove the skin and all the outer pith, the white part.

Step 3: Slice the oranges into 0.7 cm / 1/3-inch-thick rounds and remove the seeds. Alternatively, segment the oranges. Add them to the leaves.

Step 4: Mix or shake the dressing ingredients in a jar until the sugar dissolves.
Step 5: Dress the salad and toss.
Notes
Make-ahead and storage
Prepare the leaves and oranges in advance, but add the dressing when serving. Like other leafy salads, this is not suitable for storage.
Bitter leaves can include rocket, frisée, witlof, radicchio, treviso, escarole, and watercress. Other lettuce also works.
About this recipe
Sweet, juicy orange slices balance the pleasantly bitter greens in this bright salad. Tossed with an orange poppy seed dressing, it makes a fresh side for rich mains such as roasts.

Use one kind of bitter leaf or combine several for a mix of color and texture.
