Instructions
Chicken Burger Patties
Step 1: Put the patty ingredients in a bowl and mix well with your hands.
Step 2: Form 4 patties, 1.5 cm (3/5 inch) thick and slightly larger than the buns, as they shrink slightly. If the mixture is very sticky, refrigerate it for 30 minutes, or wet your hands or lightly spray them with oil before shaping.
Step 3: Heat the oil in a skillet over medium-high heat. Add the patties in batches. Cook for 2 minutes or until deep golden, then flip.

Step 4: After 1 minute, top each patty with a piece of cheese and cover the skillet with a lid to melt the cheese.
Step 5: Once the cheese has melted, remove the patties from the skillet.
Assemble
Step 6: Split the buns and lightly toast them in the oven or under the broiler or grill.
Step 7: Cut the avocado in half and scoop out a generous amount. Mash it with a fork onto the bottom half of each bun. Sprinkle with salt and pepper.
Step 8: Top with a chicken patty, then add rocket or arugula and tomato.
Step 9: Spread mayonnaise, relish, ketchup, or another condiment of your choice on the top bun, then place it on the burger.
Step 10: Serve and enjoy.
Notes
If the chicken mixture is very sticky, refrigerate it for 30 minutes or wet or lightly oil your hands before shaping the patties. Don’t add extra breadcrumbs to firm the mixture.
Ground turkey or pork can be used in place of the chicken. Dried thyme can replace the sage, or the sage can be omitted. Celery salt can replace the plain salt.
Grate the Parmesan yourself or use store-bought finely grated Parmesan. The patties can also be served with other burger toppings. French fries and baked potato wedges are listed as sides.
